The Company is located in Reggio Emilia, North Italy. Founded in 1994, it quickly became one of the leading companies in the export of grape products.

 

Production Capabilities: Able to produce from 2 to 4 containers of concentrate per day (from 40 to 80 M/T). In our plant we stock only the grape juice and must single strength – we proceed to the concentration process only after the customer’s order.

 

Deliveries: The company delivers within 15 days from the receipt of the customer’s order. (Europe).

 

Minimum quantity per order: For concentrate 5 M/T per quality.

 

Please note that in the event of orders less than 5 MT, we will group them with other orders for different customers. Obviously, in this case,  the customer should be willing to accept longer delivery times due to the fact that minimum production quantities have to be achieved for that particular batch.

 

For this reason, we decided to send - on a monthly basis - to the customers that are used to buy smaller quantities, the list of the products that we will produce during that month. In this way the final customer, interested in some products included into the list, can place orders smaller than 5 MT.  These are listed at the top of this page.

PRODUCTS

 

Even though our manufacturer deals with a full range of grape products, their  specialization concerns GRAPE JUICE and MUST CONCENTRATES.

 

GRAPE JUICE CONCENTRATES

 

Our manufacturer uses ONLY WINE GRAPES (Vitis Vinifera) to produce grape juice concentrate, we don’t use table grapes in order to maintain high qualitative standards. These high qualitative standards (thanks to high tech and proper selection of the raw material) could allow to the customer high dilution of our grape juice concentrates.

All our grape juice concentrates are treated, stabilized (tartaric, color and protein), low metal content, pectin negative.

When we say that we are able to guarantee a stable color we mean to keep light the color in the white grape juice concentrate and to keep the same “quantity” and “tonality” of color with the time passing in the red grape juice concentrates. To make it simpler we can say that we are able to delay the oxidation process that make the white and red concentrate become burnish. The advantages of getting color stable products are essentially economical (to not have after a couple of months product in stock that is the 20% less of color) and productive (consistency in the concentrates).

Further to this – we can add that – from our results and from the customers’ feedbacks – Our manufacturer's concentrates lose less colour during the fermentation process – than competitors. Also in this case the advantage is essentially economic: you can have the same color in the finish wine using less concentrate or you can use the same quantity of concentrate having a darker wine at the end of the fermentation process.

 

The manufacturer guarantees a shelf life of 6 months minimum from the production date under proper warehouse conditions.

Our grape juice concentrates can be divided:

 

WHITE GRAPE JUICE CONCENTRATE

At different Brix (from 63 Brix to 68 Brix)

At different SO2 content

Very low NTU and Color (under request)

 

RED GRAPE JUICE CONCENTRATE

At different Brix (from 63 Brix to 68 Brix)

At different SO2 content

At different coloring intensity (from 50 to 2000 USA scale)

 

ITALIAN VARIETAL GRAPE JUICE CONCENTRATE

At 68 Brix (even if it possible lower Brix)

These grape juice concentrates are obtained using 100% a certain vintage (example Cabernet Sauvignon, Chardonnay ect.) – so let say a Cabernet Sauvignon red grape juice concentrate is produced using ONLY cabernet sauvignon grapes. These types of concentrates shouldn’t confuse with VARIETAL TYPE CONCENTRATE (standard concentrate plus aromas). These products have the advantage to be richer in flavor, tasting and the overall organoleptic characteristics compared to generic concentrates. Varietal grape juice concentrates should be ordered before each crop.

 

•  SO2 FREE GRAPE JUICE CONCENTRATES

At 68 Brix (even if it possible lower Brix)

White and Reds. These products should be booked before each crop.

 

ORGANIC GRAPE JUICE CONCENTRATES

At 68 Brix (even if it possible lower Brix)

White and Reds obtained 100% by organic grapes. These products should be booked before each crop. These products are certified by BIOAGRICOOP.

 

DEIONIZED (OR RECTIFIED) GRAPE MUST CONCENTRATES

This product can be defined as a concentration of natural grape sugars. It is available at different Brix.

Further to the above mentioned typologies, Rudolf Keller manufactures any other type of grape juice concentrates, among those also “customized” grape juice and must concentrates, which are able to meet particular customer needs concerning the product specifications like for example French grape juice concentrates or grape juice concentrate to produce balsamic vinegar, Grape juice concentrate at lower brix (32 brix, 42 brix ,60 brix ect.

 

 PACKAGING:  We  pack our concentrates in the following ways:

 

a) Aseptically – using sterile bags in food grade metal or plastic drums (271 kg each). Pack the product aseptically allows big advantage in terms of transport and storage of the drums.

b) In Bins (polyethylene cisterns – 1350 kg net weight). In this case we cannot guarantee the sterility of the product – however, bins are very easy in the loading and unloading operations, storage.

From an economical point of view we apply the same price for product packed in drums or in bins. The reason being that we would always recommend and promote the use of aseptic package.

 

COLOUR IN THE CONCENTRATES

One of the most sensitive factors regarding concentrates is colour.

Colour is fundamental for both white and red concentrates.

 

Regarding color, there are two key issues:

a) The method used for testing colour

b) The stability of colour

 

METHODS FOR TESTING COLOUR:

In the world there are a lot of different methods that accordingly give different findings. Usually we test color using the USA scale – but we are able to test using also the European Scale or Internal Scale (if the customers transmit to us their required and preferred testing method).To use the same method of colour between customers and suppliers is essential in order to compare colour of different products, quotations and appreciate the mutual needs.

COLOUR RED CONCENTRATE (COLOUR METHOD SAN JOAQUIN)

2.00 gr of red concentrate in 100 ml of buffer solution pH 3.20, 0.45 %uF06Dm filter.

Read as absorbance at 430 and 520 nm (1 cm optical path cuvette).

COLOR: absorbance @ 520 nm X 1000

RATIO: Abs @ 520 divided by Abs @ 430

BUFFER PREPARATION: 36.170 g anhydrous citric acid [39.599 mono-hydrate]

33.107 g sodium phosphate dibasic 7 hydrate,

[17.532 g anhydrous]

Add distilled water for a total volume of 1.000 ml

 

COLOUR WHITE CONCENTRATE:

16.0° Brix [concentrate + distilled water], 0.45 micron filter,

1 cm square light path @ 430 NM. Read as absorbency.

Italy is the country in the world with the highest quantity produced of grapes in the world. Further in Italy grows the highest number of type of grapes. So we can enjoy of a perfect combination of quantity and quality.

 

The farmers, once picked the grapes, deliver to the social wineries (cantine sociali) that proceed to the first process of squeezing in order to obtain the grape juice and must single strength.

 

Our manufacturer purchases the grape juice and must single strength from the social wineries.

We established long terms relationships with a network of social wineries located all around Italy so to have available raw material obtained by different type of grapes.

 

The typical grapes from our area are essentially red ones:

 

• ANCELLOTTA: the grape in the world with the highest coloring intensity.

• LAMBRUSCO: from which comes the famous wines. The main characteristic of this grape is the high acidity content.

• SANGIOVESE: one of the more popular grape in Italy

 

But we are purchasing many, many more!
